Wow! What a crazy week! New job, new colleagues, so many new things to discover and learn! It was hard finding the time to do any cooking! Plus, it was the boyfriend’s birthday and this week-end was in his family with many delicious meals and restaurants.
I swear I am so full I could die from food coma. So tonight was all about keeping things veggies (especially since all the vegetables I bought are slowly dying in the fridge). And I wanted to make satay sauce for a few weeks now, so hey, why not trying to replace the dressing with satay sauce? It’s a change, the boyfriend loved it so in the end it was quite a success 🙂
Before giving the recipe, I’d like to mention that “satay sauce” is quite a big word for what I prepared. It started with a satay sauce recipe, but I did my own version. Hope you like it 🙂
Recipe: Apple satay salad (by My Little Cuisine)
Ingredients (for two plates):
- 1 Granny Smith apple
For the satay sauce:
A spoon is all you need to measure the quantities 🙂
- 4 spoons peanut butter
- 2 spoons soy sauce
- 3 spoons coconut milk
- 3 spoons milk
- 2 spoons sugar
- 1 pinch of powdered ginger
- 1 pinch powdered red pepper
- 1 pinch cumin
- In a small pan, pour all the satay sauce ingredients. Mix everything together on low heat.
- Carefully wash the lettuce and cut it in small pieces. Chop the apple in cubes.
- Pour the sauce on the salad.
Tip n°1: If you want the sauce to be more liquid, add milk and adjust the spices to your liking.
Tip n°2: You’re really hungry? This recipe goes very well with plain rice. Just add more sauce to mix everything together.
